Summer Cake - Victorian Sponge Cake

The classic Victorian sponge cake with fresh cream and strawberries 🍓 was the perfect choice for a summer afternoon on the stoep. ☀️👒
Ingredients
4 eggs
300 ml castor sugar
500ml flour
15ml baking powder
250ml milk
100g butter
5ml vanilla essence
Strawberries
500 ml fresh cream
Whisk eggs and sugar until light and fluffy
Sift flour and baking powder together and gently fold into eggs

Heat milk and butter not boil, stir in milk and essence
Spoon into two 20cm greases cake tins and bake for 25-30 min 180 °C
Whip fresh cream and decorate cake with cream and strawberries
Enjoy with family and friends
